Pumpkin Spice Latte Brownies!
Fall means leafs changing colors, cooler weather, and . . . well . . . okay, let’s be honest. Fall means pumpkin spice.
We all love it and we all want it, so we’ve got this great recipe that combines espresso brownies with a rich cream cheese topping swirled with tasty pumpkin spice.

What You’ll Need
7 Eggs (4 for Brownies, 3 for Swirl)
3 Cups of Sugar (1 1/2 for Brownies, 1 1/2 for Swirl)
1 Cup of Flour
1 Cup of Butter
1/2 Cup of Cocoa Powder
1/2 Cup of Pumpkin Puree
24 Oz. of Cream Cheese
2 Tablespoons of Instant Espresso
1 Teaspoon of Vanilla Extract
1 Teaspoon of Vanilla Bean Paste
1 Teaspoon of Salt
1/2 Teaspoon of Baking Powder
1/2 Teaspoon of Pumpkin Pie Spice
– Step 0 –
Before we really get started, you’ll want to do the following:
– Set the cream cheese out so it has a chance to soften
– Set out the three eggs you’ll be using in the Swirl – you want them to be at room temperature
– Get a 9×13 baking dish, put down parchment paper, and spray it with a non-stick cooking spray
– Melt the cup of butter
– Step 1 –
Let’s start with the brownies! Mix 4 Eggs, 1 1/2 Cups of Sugar, and 1 Teaspoon of Vanilla Extract in a large bowl.
– Step 2 –
Once mixed, pour in 1 Cup of Melted Butter. Do this slowly and then whisk it all together.
– Step 3 –
Add 1 Cup of Flour, 1/2 Cup of Cocoa Powder, 2 Tablespoons of Instant Espresso, 1 Teaspoon of Salt, and 1/2 Teaspoon of Baking Powder to the bowl and fold it into the mixture. After adding and folding, stir the mixture together until it’s fully combined (don’t over-stir, though).
– Step 4 –
Pour the brownie mix into the pan and smooth it out.
– Step 5 –
Add 24 Oz. of Cream Cheese and 1 1/2 Cups of Sugar to a large bowl. Beat these together until the mixture is fluffy.
– Step 6 –
Take 2 of the Room Temperature Eggs and 1 Teaspoon of Vanilla Bean Paste and beat them into the cream cheese mixture
– Step 7 –
In a different bowl, add 1/2 Cup of Pumpkin Puree, 1/2 Teaspoon of Pumpkin Pie Spice, and 1 of the Room Temperature Eggs and stir together.
– Step 8 –
Now it all comes together! Pour the cream cheese mixture onto the already poured brownie mixture in the pan. Smooth it all out.
– Step 9 –
Now it’s time to add the Pumpkin Spice! Take the pumpkin mix and gently scoop out 1 tablespoon onto the brownies. Repeat this across the brownies, evenly spacing the scoops to make three rows with four scoops each.
– Step 10 –
Take a toothpick and swirl the pumpkin mixture into the cream cheese. Don’t push down deep as you swirl – you just want to work it into the cream cheese mixture.
– Step 11 –
Tent the baking pan with foil.
– Step 12 –
Bake for 40-45 minutes – you want the cream cheese topping to be set. Afterwards, let the dish lower to room temperature and then chill it for 30+ minutes. After all that, slice and serve!
