Tips & Tricks: Lovely Lemon Bars
It’s time for something sweet with a wonderful touch of tanginess – lemon bars with a shortbread base! This desert from Margaret Peterson at TasteofHome.com is perfect for when you’re feeling chocolated-out. This recipe makes about three dozen bars, so it’s great for parties!
What You’ll Need
Shortbread Base
– 1 1/2 Cups of Flour (All-Purpose)
– 3/4 Cup of Butter (Cubed, Cold)
– 1/2 Cup of Powdered Sugar
– 1 Tsp. of Freshly Grated Orange Peel
– 1 Tsp. of Freshly Grated Lemon Peel
Lemon Filling
– 2 Cups of Sugar
1/4 Cup of Flour (All Purpose)
– 1 Tsp. Baking Powder
– 4 Eggs
– 1/3 Cup Fresh Lemon Juice
– 2 Tsp. of Freshly Grated Orange Peel
– 2 Tsp. of Freshly Grated Lemon Peel
Let’s Get Cooking!
– Step 1 –
We’re going to start by preparing the Shortbread Base. Break out the food processor and combine your grated orange and lemon peel with the flour and powdered sugar.
– Step 2 –
Once that’s blended, add in the cubed butter and run the processor until you have a nice ball of shortbread dough.
– Step 3 –
Set the oven to 350 F and grease a baking pan (13 inches by 9 inches). Work the dough into the bottom of the pan and let it bake for 12 to 14 minutes.
– Step 4 –
Combine the sugar, flour, baking powder, eggs, lemon juice, and the ground peels in a bowl.
– Step 5 –
Once the Shortbread Base is done, pop it out of the oven and pour the Lemon Filling over it. Use a spatula to spread it evenly.
– Step 6 –
And now back into the oven with it! Bake the Lemon Bars for 7 to 9 more minutes. After baking, let the bars cool and then refrigerate them over night. Don’t cut the bars until just before serving and – if you want – sprinkle on some extra powdered sugar.
