No-Bake Lemon Tart!

Lovely Lemon Tart on a Black Plate

August is in full swing, and that means we’re in the middle of the Dog Days of summer. If you’ve got to make a dessert for an upcoming party, the last thing you want to do is be in front of a hot stove all day.

So here’s a great recipe for No-Bake Lemon Tarts with tons of pretty toppings!

What You’ll Need

  • Heavy Cream (2 Cups)
  • Graham Crackers (14)
  • Granulated Sugar (1/2 Cup)
  • Unsalted Butter (7 Tbsp)
  • Lemon Juice (1/3 Cup)
  • Lemon Zest (2 Tsp)

Decorations

  • Strawberries, Mango, Raspberries, Cherries, or Whatever Fruit Your Partial To

Let’s Get Cooking

The Crusts
– Step 1 –
Break up the graham crackers and put them in a food processor. Pulse them until they’re reduced to fine crumbs.

– Step 2 –
Melt the butter and then combine it in a bowl with the graham cracker crumbs.

– Step 3 –
Press the mixture into six, four-inch tart pans with removable bottoms. Make sure the sides and bottom all get equal pressure so that the crust is firm and even. After you do this, pop them in them fridge until they’re firm (which will take at least 30 minutes).

The Filling
– Step 1 –
Take the cream and sugar and combine them in a medium saucepan. On low heat, cook this mixture until the sugar dissolves (which will take about 5 minutes). Make sure you keep stirring this mixture as the sugar is dissolving.

– Step 2 –
Turn the heat up and bring the mixture to a boil. After it reaches a boil, let it simmer (for about one minute). After that, take the mixture off the stove.

– Step 3 –
Add the lemon juice and the lemon zest to the mixture and mix. Let this cool (for about 20 minutes).

The Tarts
– Step 1 –
Spread the tart mixture into the graham cracker crust lined shell. Pop them back in the refrigerator to let them set. You want them to set for a minimum of 2 hours and a maximum of 24 hours.

– Step 2 –
Time to decorate! Take your strawberries and mangoes and slice them up, grab the cherries and raspberries and make some beautiful looking lemon tarts.

You can do just about anything with these, so if you’ve got a favorite fruit or even chocolate decoration, go to town and make these tarts as lovely looking as you like!
