Making Bacon from Mushrooms!
We all know bacon tastes great and smells wonderful, but it’s not exactly healthy. In fact, it’s pretty unhealthy. So what if you could have bacon without having bacon? What if bacon could be relatively healthy? No, this isn’t a fairy tale – it’s specially cooked shiitake mushrooms.

What You’ll Need
1 Pound Shiitake Mushrooms
1 (2) Teaspoons Sea Salt
4 (8) Tablespoons Extra Virgin Olive Oil
Let’s Get Cooking
– Step 1 –
Thinly slice your mushrooms.
– Step 2 –
In a bowl, mix 1 teaspoon of sea salt and 4 tablespoons of olive oil.
– Step 3 –
Stir in the mushrooms and coat them in the oil. You want a good coating – if it looks like there isn’t enough oil, add in the 4 extra tablespoons of oil and another teaspoon of salt.
– Step 4 –
Let the mushrooms marinate for 20 to 30 minutes.
– Step 5 –
Set your oven to 350 F and line a baking sheet with tin foil or parchment paper.
– Step 6 –
Spread the mushrooms evenly across the sheet – make sure they don’t overlap each other.
– Step 7 –
Bake for 10 minutes, flip them, and bake for another 15.
– Step 8 –
Increase the heat to 375 F and bake for 10 more minutes, flip them, and bake them for 10 more minutes. Use your best judgment when baking the mushrooms, because they’ll cook slower or faster depending on how thinly you sliced them. Also, they can burn easily so keep a close eye on them towards the end.
– Step 9 –
Move the mushrooms to paper towels and let them drain. It’s important to serve them shortly after cooking, as that’s when they’re crispiest.
