Super Chocolate Cookies!

Valentine’s Day is coming soon and it’s chocolate time!

Today, we’re making a Triple Chocolate Cookie recipe from Bobby Flay on the Food Network. Well, we’ll start by making the cookies, then eating them, and then looking forlornly at where the cookies once were.

What You’ll Need
– 6 oz. of Bittersweet Chocolate (Coarsely Chopped)
– 2 oz. of Unsweetened Chocolate (Coarsely Chopped)
– 1/2 Cup of Semisweet Chocolate Chips
– 1/2 Cup of White Chocolate Chips
– 2 Tsp. of Instant Espresso Powder
– 1/4 Cup and 2 Tbs. of Flour (All-Purpose)
– 1/4 Tsp. of Salt (Fine)
– 1/4 Tsp. of Baking Soda
– 3/4 Stick of Unsalted Butter (Slightly Softened)
– 1/2 Cup of Sugar
– 1/4 Cup of Brown Sugar (Lightly Packed)
– 2 Large Eggs
– 2 Tsp. of Vanilla Extract
– 1 Cup of Toasted Nuts (Your Choice, Coarsely chopped)

What You’ll Do
Step 1: Set your oven to 350 degrees.
Step 2: Use some parchment paper to line your baking sheets.
Step 3: Put the bittersweet chocolate, unsweetened chocolate, and espresso powder into a medium sized bowl.
Step 4: Simmer water in a pot and place the bowl above it. This will begin melting the chocolate. Whisk occasionally until the chocolate is smooth.
Step 5: While the chocolate warms up, take the flour, salt, and baking powder and sift them together into a separate bowl.
Step 6: Use an electric mixer with a paddle attachment to beat the butter, sugar, and brown sugar together for about 2 minutes (until its light and fluffy.)
Step 7: Add the eggs to the mixture (one at a time.)
Step 8: Add the vanilla extract and beat the mixture for 1 minute at high speed.
Step 9: Switch the mixer to low speed and beat in the melted chocolate. You want to mix until it’s just combined.
Step 10: Take the flour/salt/baking powder and, with a rubber spatula, fold it in into the mixture until just combined.
Step 11: Stir in the chocolate chips (semisweet and white) and the nuts.
Step 12: Cover the bowl and put it into the fridge until it’s firm (about 30 minutes.)
Step 13: Scoop out the batter (small ice cream scoop) onto the baking sheets. Put about eight dough-balls on each sheet.
Step 14: Bake the cookies (10 to 11 minutes.)
Step 15: Place the cookies on a cooling rack for two minutes.
Step 16: Remove the cookies and let them cool for five more minutes.
Step 17: Eat ‘em.
