Summer Quinoa Salad
Going to a potluck? Packing for a picnic? Then you’ll want a nice salad to compliment the main course. This summer, however, let’s drop the potatoes and eggs for something healthier and fresher: a quinoa salad with bell peppers and lime! This recipe comes from Laura Violet at AllRecipes.com.
What You’ll Need
1 Red Bell Pepper
1 Yellow Bell Pepper
1 1/2 Large Red Onions
1 Cup of White Quinoa
1 Cup of Red Quinoa
1 Teaspoon Salt (Preferably Sea Salt)
1/4 Cup of Olive Oil
2 Limes
Cilantro
Let’s Get Cooking
– Step 1 –
Fill a pot with four cups of water, bring it to a boil, and add the quinoa.
– Step 2 –
Bring the water down to a simmer, cover the pot, and let it sit for fifteen minutes. After that, move it to the side and let it cool.
– Step 3 –
While the quinoa cools, chop up your bell peppers and onions and add them to a large bowl. Add in the salt and pepper, mix it all together, and then mix in the quinoa.
– Step 4 –
Juice the limes and then, in a separate bowl, whisk the olive oil and lime juice together.
– Step 5 –
Pour the olive oil/lime juice mixture over the quinoa and mix it it.
– Step 6 –
Chop up two tablespoons of cilantro and mix that into the salad.
– Step 7 –
Cover the salad in saran wrap and pop it in the fridge for four hours to let the flavors sink in.
