Oxi Fresh’s Favorite Treats: Russian Tea Cakes!

I sit here with my tea (Licorice Root Herbal!) and wish I had something to tasty to go with it. Then it struck me – Russian Tea Cakes! These tasty, dense treats go perfect with a lovely cup of tea. Here’s my favorite recipe, courtesy of Sandra Reese.
1 Cup of Butter (Softened, but not Melted)
1/4 Teaspoon Salt
1 Teaspoon Vanilla Extract
1/2 Cup Powdered Sugar
2 Cups of All-Purpose Flour
1 Cup of Sliced Almonds
Powdered Sugar for Coating
Let’s Get Coking
Step 1: Set the oven to 350 degrees F
Step 2: Blend the butter until creamy
Step 3: Add salt, vanilla extract, and flour to the butter
Step 4: Blend the mixture until just mixed
Step 5: Mix in your sliced almonds
Step 6: Roll the dough into 1/2 to 1 inch balls. The dough may feel crumbly, but press it together hard enough and it will hold its shape
Step 7: Put the dough onto an ungreased baking sheet, leaving two inches between each ball
Step 8: Bake for 15 – 20 minutes. Make sure that the cakes do not over-brown
Step 9: Roll the cakes in the powdered sugar
Step 10: Put the cakes on a wire rack to cool
