Tips & Tricks: Mango Salad with Goat Cheese and Celery
We’re coming into a perfect time for mangoes, so let’s put together a delicious salad based around this wonderful fruit and throw in some refreshing celery, crunchy Brazil nuts, and some perfectly tasty goat cheese crumbles! Yum!
What You’ll Need
9 oz. of Mango (Click here for advice on picking the perfect mango!)
1 oz. of Brazil Nuts
1.5 oz. of Unripened Goat Cheese
2 Cups of Lambs Lettuce (Mâche)
2 Celery Stalks, Large
15 Basil Leafs, Large
15 Mint Leafs
2 tsp. of Cider Vinegar
1/4 tsp. of Salt
1/4 tsp. of Black Pepper
Let’s Get Started
Step 1: Slice the celery stalks into pieces
Step 2: Coarsely chop the Brazil Nuts
Step 3: Peel the Mango and chop up 9 oz. of it into roughly 1/2 inch cubes. Here’s a great video on an easy way to peel a mango
Step 4: If it’s not pre-crumbled, crumble up the goat cheese
Step 5: Chiffonade the basil leafs by stacking them up, rolling them up tightly, and thinly slicing them. You want to go perpendicular to the roll, almost like you’re cutting the rolled leafs into rings
Step 6: Chiffonade the mint leafs
Step 7: Mix together all the ingredients except the lambs lettuce and goat cheese
Step 8: Line a plate/plates with the lambs lettuce, spoon the mix onto the bed of lettuce, and sprinkle on the goat cheese
Step 9: Enjoy!
