Double Treetastic Cookies

Life without cookies is a tragedy, dear friends, and this recipe is the dashing hero who will save you from your cookie-deprived towers. This recipe is based on a famous cookie from a certain hotel chain and comes from Jenny at FoodGeeks.com and Julie at thelittlekitchen.net.

What You’ll Need
1/2 Cups of Rolled Oats
2 1/4 Cups of Flour (Unbleached)
1 1/2 Teaspoons of Baking Soda
1 Teaspoon of Salt
1/4 Teaspoon of Cinnamon

3/4 Cup of Packed Brown Sugar
3/4 Cup of Granulated sugar
1 Cup of Softened, Unsalted Butter
1 1/2 Teaspoon of Vanilla Extract
1/2 Teaspoon of Fresh Lemon Juice

2 Large Eggs
3 Cups of Semi-Sweet Chocolate Chips
1 Cups of Chopped Walnuts

What You’ll Get
20-30 Cookies (It depends on how big you want the cookies to be. For me, the recipe only makes one.)

What You’ll Do
Step 1: Grind your oats until fine
Step 2: In a large bowl, combine your oats, flour, salt, baking soda and cinnamon
Step 3: In another bowl, cream the butter, vanilla, the freshly squeezed lemon juice and the sugars together
Step 4: Add the eggs to the wet mixture and mix until smooth
Step 5: Stir the dry mixture into the wet mixture and blend well
Step 6: Add in the nuts and chocolate chips (You may want to chop the nuts up a bit more – it depends on how you like them) and stir until well blended
Step 7: Pop the dough into the refrigerator overnight (Or if you’re impatient, 2-4 hours. If you’re really impatient, try not to eat it raw)
Step 8: Spoon out balls of dough (1/4 cup each) onto an ungreased cookie sheet. Keep the cookies about 2 inches apart
Step 9: Bake the cookies at 350 F for 16-18 minutes and set on a cooling rack
Step 10: Eat them all, blame it on the notorious Cookie Thief and start again
